After securing the Michelin star for Soseki Modern Omasake in 2022, Chef Collantes now curates the dining menu. His extensive knowledge in catering comes from his extensive Hawaii roots and numerous years learning from culinary masters. The restaurant serves Asian and Polynesian cuisine fusion items based on menu selections. Through its Hawaiian origins the restaurant mixes world-inspired cuisine to produce seasonal recipes that showcase Hawaiian local ingredients. The chef’s specialties include Escargots Malasadas filled with snails and black truffle cream combined with Piña Colada oysters and loco moco braised beef cheek. Octopus anticuchero, coconut tapioca panna cotta and lilikoi crème brûlée complete the menu selection.
